Acorn Squash

An easy way to bake Acorn squash in the oven.

Acorn squash is so easy to prepare and is a great side dish, especially if you are looking to cut calories. If you are not looking to cut calories, you can add brown sugar, butter and cinnamon to the squash before baking.


INGREDIENTS

  • 1 Acorn Squash
  • 2 tsp olive oil
  • 1/2 tsp salt
  • pepper to taste


DIRECTIONS

  1. Preheat oven to 425 degrees F.
  2. Wash the outside of the squash really well, then cut in half lengthwise and scoop out the seeds.
  3. Place on a parchment lined, or silpat lined baking sheet.
  4. Drizzle 1 teaspoon of olive oil in each half, sprinkle with salt and pepper.
  5. Bake for 30-45 minutes.
  6. Let cool slightly and then scrape out the squash with a spoon.
  7. Serve immediately or store in the refrigerator.



Freezes well too.
