Coleslaw with Ramen Noodles

Great dish for a pot luck or easy lunch

This is a great recipe to take to a potluck or as a dish to pass because you can make everything ahead of time and just toss together about 30 minutes before you want to serve it to give the noodles time to soften.

INGREDIENTS
  • 1 small head cabbage or 1/2 large head
  • 1 package Ramen Noodles
  • 2/3 Cup Rice Vinegar
  • 1/3 C Vegetable Oil
  • Salt & Pepper
  • 3 Tablespoons Sesame Seeds
  • 1 C. Slivered Almonds

DIRECTIONS
  1. Toast the sesame seeds and slivered almonds in a non stick pan over medium low heat until browned.
  2. Mix together the rice vinegar, oil, ramen seasoning packet, salt and pepper.
  3. Keep everything separate and chilled if serving later, just toss together 30-45 minutes before serving.
